You have probably heard of tahini, but you may not have tried it yet. Tahini is a paste made from pulverized sesame seeds that creates the base in many savory treats from brownies to hummus to smoothies. Creamy with a nutty flavour (but is nut free) + rich in fiber and protein, Tahini has an earthy flavor that helps balance the sweetness of baked goods. Be sure to look for good quality Tahini as over-roasted or stale seeds can overwhelm the flavour. Our fave Tahini based recipe to try that is both dairy and gluten free are Tahini brownies. Paleo Tahini Chocolate Brownies
This is a coveted recipe that Kerri Cooper from Roots Kitchen shared with us. They are a family favourite and our kids gobble them up. They are scrumptious!
In one bowl, using a spatula, mix together:
- 2 whisked eggs
- 1 cup tahini
- 1⁄4 cup maple syrup
- 1⁄2 cup coconut sugar
- 1 tsp vanilla extract
In a separate bowl whisk together:
- 1/3 cup sifted cocoa flour (*the best quality you can get your hands on)
- 1 Tbsp coconut flour
- 1/4 tsp sea salt
- 1/2 tsp baking soda
Add the dry ingredients to the wet ingredients and mix gently. Stir in 1/3 cup chopped dry cherries and 1/3 cup chocolate chips.
Pour into a parchment lined square baking pan (*8x8 or 9x9 in size) and spread evenly throughout the pan. Bake in a 350°F pre-heated oven for 18-19 minutes.
