These health bites are often just what is needed to tide you over between meals, or to provide a little pick me up before hitting the gym or trails. Another perk - kids LOVE them!! Super easy to make and healthy to boot, (densely packed with fibre, protein and healthy fats), these energy balls can be whipped up in under 15 minutes.
You need: (honestly - you don’t really even need to measure - just eyeball it and add more or less of what you want):
- 1 cup pitted dates (if dry, soak them in warm water for 10 minutes, then drain well)
- 3/4 cup Almond (or peanut butter or a nut butter substitute)
- 2 tbsp Chia seeds or Hemp seeds (or flax!)
- 1 cup Oats
- 3/4 cup Chocolate chips or vegan chocolate chips (I like to use the minis)
Pulse the dates in a food processor or bullet until they are in small pieces or it forms a ball.
Add oats, chia seeds, nut butter and mix until combined. Add the chocolate chips.
Roll into balls - the warmth of your hands will mold them together.
To set, pop in fridge or freezer. Or eat as it is! These delicious bites will keep in an air-tight bag or container for up to a week in the fridge. ENJOY!
